Homemade Tortillas Are So Easy To Make // You’ll Wonder Why You Ever Bought Them

Making the Dough
For our first homemade tortillas, I was unsure how much we would like the process.
So, I purchased – gasp – a tortilla mix. It worked fine. But, once I got into our two cookbooks; I realized just how easy totally from-scratch tortillas are.
Tortillas require very few ingredients. Flour, salt, water, olive oil. Once mixed; you simply divide the dough and place it in your press and – press. That’s it!

Cooking
First, we mixed water in the tortilla mix, and then pressed the dough in our Tortillada Press.
About thirty seconds on each side on the stove is about right. We chose to use a cast iron crepe maker. It was the perfect size and the short sides made removing tortillas easy.

Filling
Oh, the choices here are endless. I chose from the cookbook an easy black bean and corn filling. Next round will be shrimp… then carnitas…
While Bill mashed the beans, I sautéed the corn in another cast iron skillet. I do use a refillable olive oil sprayer to prep and treat my pans.

Presentation
We topped our tortillas with a bit of chopped cilantro and unflavored yogurt in lieu of sour cream.
For a meatless meal; it was incredibly satisfying – not only in taste, but also knowing we had made most of the meal ourselves.
