If you’re looking for something fun, fast, and easy to make dinner; it’s trash pizza with your own homemade pizza dough and homemade pizza sauce. If you have bread flour and yeast; that’s the main specialty item. The rest you probably already have in your fridge and freezer! Trash pizza is faster to make than driving into town or waiting for a pizza delivery.

Pizza Dough

1 T yeast
1 T sugar
1 c warm water
2 1/2 c bread flour
2 T olive oil
1 t salt

That’s it!
Dissolve the yeast and sugar in the warm water.
Let that stand 10 minutes until it’s creamy.
Beat in the flour, salt, and oil until smooth.
Rest five minutes.
Turn onto lightly floured surface.
Place on lightly floured and greased pan.
Add toppings.
Bake at 450 degrees F for 15 minutes in a convection oven; 450 degrees F for 20 in a standard oven – but watch it!

Position your pizza pan closeby so you can judge the size to which you need to roll the dough. You can lay the pan on your dough and cut off the excess with a sharp knife. I prefer to just “squish” the dough a bit smaller and use it all on our large-sized pizza pan.

These days, I’m not going into grocery stores, so I did a lot of research, then ordered the main supplies for making the pizza dough:

Some Tricks With This Dough

I use a stand mixer with a dough hook. While the yeast and sugar are dissolving, I quickly scour the fridge and start chopping.

Yes, you can knead the dough by hand; that will take about five to ten minutes depending on your enthusiasm.

You can use as little as a teaspoon of sugar with the yeast – I use a bit more to speed up the process. I’ve accidentally left out the olive oil or the salt, and no one has noticed.

If you are making a medium-sized pizza; this recipe makes enough dough to prepare some garlic knots or breadsticks for another meal with the excess dough.

Pizza Sauce

6 ounces tomato paste
15 ounces tomato sauce
Oregano to taste
Italian seasoning to taste
1/2 t garlic powder
1/2 t onion powder
1/2 T garlic salt
1/4 t fresh-ground black pepper
1 t sugar

Mix.
Use.
Makes enough for two medium or one large pizza.

We have used spaghetti sauce; it’s a bit runny, so needs to be “cut” or thickened with tomato paste. You’ll find that if you have fresh tomatoes, or canned, you can play around with the ingredients to recreate the consistency and flavor of pizza sauce, while eliminating a lot of added salt and sugar.

Pizza Toppings

Anything goes! Start looking in your fridge and in your pantry. Bill swears by putting a bit of the cheese directly on top of the pizza sauce, then loading up the pie.

Here are some of our favorites:

Tomatoes freshly sliced
Black olives
Garlic
Jalapeno diced
Fresh spinach
Pineapple
Mushrooms
Onion
Green, red, and yellow peppers

Ham
Ground beef sauteed with onions
Breakfast sausage patties chopped – we sure can get creative!
Pepperoni sliced
Sausage
Bacon – just a bit gives your pizza such a nice, rich flavor.

And the list goes on and on!

Oven Time!

If you have a convection oven; make sure to preheat it while you are rolling out the dough. A convection oven’s heating process involves higher temperatures than your baking temperature, so don’t put items in until it’s ready.

We have experimented with baking the dough “naked” first – that did not seem to make any difference. However, we have found that a minute or two extra does make a difference.

The thicker your toppings; the more time you may need. One trick is to pre-cook your onion and tomato for a couple minutes in the microwave, then drain them thoroughly so they don’t make your crust wet.

Timing Your Pizza

About 15 minutes in a 450-degree convection oven, or 20 minutes in a standard oven is about right. You will have to watch your oven closely the first time to get a feel for any “hot spots” that bake too fast.

Just a minute too long can really darken the cheese on top, so be careful.

This homemade pizza came out a little dark, and the onion was not fully cooked. We’ve been experimenting on Friday nights with our pizzas, and have finally perfected the timing, prep, and routine.

Your total time may vary, but specifically, there’s ten minutes for the yeast to activate, five minutes for the dough to rest, and 15 minutes in the oven. If you use the time you are waiting on the yeast or the dough for chopping, the second 15 minutes is nothing but waiting and smelling the homemade goodness!
